MY INFORMATION - WHERE IT COMES FROM.


I have no academic training in the area of nutrition.


I have passionately read and listened to enormous amounts of information over many years and most importantly I have observed my own body and its responses to the food I have given it and have noticed how different eating patterns effect how the food is handled by my body.  My wife and I have made these observations together and have discovered some well known patterns to be true, and others to be meaningless to us.  We have also discovered some new ones of our own.


The following information is also based on a few premises that I must share with you.

The human body is an extremely intelligent mechanism and knows how to heal itself.

A natural approach to health and wellness has proven itself to work over the many millennia that man has walked the earth and that the western medical system with its unquestionable ability to perform what I consider to be miracles in the areas of surgery, has by and large failed to understand the significance of our diets in relation to our general health and well being.

That a scientific approach to the understanding of man's relationship to food is absolutely essential if we are to pull ourselves out the the dietary quagmire the we currently find ourselves in.  The area of research that is desperately needed is to discover the rich natural untapped resources that already grows on this planet, and nurture them organically - we do not need to genetically modify them.

In 2004 I was blessed with a job to help design a resort on one of the islands of French Polynesia (Tahaa).


Just being there was an experience of being totally alive.

WHAT WE SHOULD EAT


Fresh is best - from what I have read, between 60% and 80% of our diet should be raw.  This needs to be as varied a possible from the range of fruit, vegetables, nuts, seeds and grains that are in season.


I personally prefer a vegetarian diet and have noticed that generally vegetarians are healthier than those on predominantly meat diets.  Interestingly most centenarians are vegetarians or do not eat red meats.


On the occasions when I do eat meat I find that the following morning my stomach feels heavy and sometime cramped, which is in stark contrast to the way I normally feel - light and comfortable.


The specifics of particular foods I do not want to get into, because we all know that junk food, processed foods, refined foods and foods with chemical additives should all be avoided.  We all turn a blind eye to the fact that these foods are quite literally KILLING us.  If you must eat this stuff please at least be honest with yourself.  Admit that you are consciously shortening your life and the time that you will be able to spend with your family and friends, and lines like "I don't eat this very often" or "Just this one won't hurt" are lies.


Sorry about being a bit heavy, but one day a few years ago I went to the doctors to get a lump checked out (Doctors are good at things like that, and a whole lot more) and as usual I was sitting there for ages.  I love looking at people and that's just what I did.  These people were sick, but they were also eating garbage.  Most of them were pale, most of them were lethargic, most of them had dark circles under their eyes.  These are all symptoms of bad diets.  I bet in most cases the doctors prescribed them some chemical that at best would mask the symptoms the patient went to discuss, and at worst add to the concoction of chemicals that were already in the persons body that would produce some other undesirable symptom some time down the track.

HOW WE SHOULD EAT


The old saying of  "In the morning eat like a King, at lunch like a Prince, and at dinner like a pauper." is very sound advice.


Our bodies slow down at night and have a hard time digesting the food from the night before - especially if we have eaten large and heavy meals.  I have noticed that if I eat late at  night I wake up feeling lethargic and heavy the next morning, as opposed to missing the night meal or have a light snack of fruit.


MORNING EATING

I generally start the morning with a glass of fresh glass of carrot, celery and beetroot juice with a small amount of ginger.  My wife and I go then for a morning walk and come home for a breakfast of cereal or toast with poached egg or tomato slices.


MIDDAY EATING

Most lunches are fresh salads - lettuce, tomato, grated carrots and beetroot, mushroom, sprouts and sometimes tinned tuna.  We try and keep breads to a minimum as we have notices the especially wheat breads tend to puff us up, which we definitely do not want to have happen when we are trying to loose some weight.


NIGHT EATING

This is going to be the hardest of the meals to make real changes to because for so many families a large night time meal is a ritual.  We managed to change the way ate at night by preparing a platter of cut up raw vegetables - carrots, celery, tomatoes, capsicums, cucumber and lettuce with hard boiled eggs.  Or sometimes we would prepare a platter of fresh fruits or of steamed vegetables.  These started off being very  popular and considered to be a treat - they have now become the norm.

The platter idea tended to reduce the amount of food we were eating as well as focusing on only foods that we know to be good for us.


SNACKS

It is generally considered that more small meals are better than few large meals.  This way our stomachs are not stretched and our digestive system does not get overloaded.

If you are generally trying to reduce your food intake, instead of getting something to eat get a glass of water and go back to doing what you were before.  Often the glass of water will do the trick and if not it has managed to delay feeding yourself.

I have found apples to be the best snack for allaying hunger pangs, without  having to pile on the calories.

WHAT IS MISSING FROM OUR DIETS


Naturally the body knows how to maintain health and heal itself, given that it is fed the right ingredients  to function properly.


Unfortunately many of the necessary ingredients that one come from our foods are now missing from our modern diets.


•    Fruits and vegetables are now grown in nutrient deficient soils.


•    Toxic Chemical fertilizers are used to promote plant growth,

        - chemical fertilizers do nothing for the nutrient content of the fruit.


•    Our food is green harvested and gassed to ripen

        - most of the essential nutrients are released into the fruit by the plant

          in the last 48 hours before peak ripening.


•    Once harvested our food is often stored for long periods of time.

        - further processing ensures that any remaining nutrients are

          destroyed.


Where possible it is important to eat FRESH, LOCAL, ORGANIC.

WHY WE OVER EAT


For most of us I believe being over weight is a symptom of a dietary problem, not a problem in itself.


Junk food is "nutrient void".  Eating this stuff (even if it tastes good) does not

answer the bodies call to be fed.  No matter how much junk food you eat you will still fell hungry because the body is still looking for the nutrients it needs to function properly - you see the body is intelligent even its host brain is not.


I often hear mums, when talking about their growing teenagers, say "I need to find things that will fill these bottomless pits my kids have for stomachs."  Fill our kids stomachs with starchy fatty junk food is not going alleviate their hunger.  There bodies are growing and are asking for the nutrients that will facilitate for the best possible growth their bodies are capable of.


Keep lots of fresh food around and keep all easily consumed junk food out of the house.  There may be a short term fight but there will be a long term win as you and or you kids grow and grow  up to be physically and mentally as healthy as is humanly possible.


OVERWEIGHT and YOU DON'T OVER EAT ?


If our diet is deficient of the nutrients for proper body function because we either only eat junk or we don't eat enough good food our our body's response is much the same.


Because our bodies do not have what they require for healthy functioning in desperation they hold onto what ever they can get hold of and milk it for everything it can get.


This is a seriously bad thing to happen.  Our bodies unnecessarily hold onto fat and toxins rather than eliminating them as would happen to someone with a healthy diet.

HELPFUL HINTS - SORT OF OBVIOUS STUFF


Never go shopping when you are hungry.


Make a shopping list before going to the shops - and stick to it.


Make some definite discussions about the sorts of foods that are out of bounds.


Don't wait to get cancer before you realize that the human body was meant to be fed fresh nutritious food - many cancer rehab clinics only feed fresh nutritious food - funny that.


Being unhealthy or overweight did not happen quickly - don't expect it to correct quickly - be patient and diligent   - listen to your body and it will heal.

Health and dietary nutrition is my passion - I have noticed significant differences in my life and the lives of my family when we eat junk food compared to when we great fresh nutritious food.


I have observed and have encouraged my children to observe others - what they eat and how healthy they are.  Are they energetic, what colour is their skin, are they moody and so on.
